Our easy French crepe batter recipe
Here you have it! Our easy crepe batter recipe, so yummy and simple to make. For 4 people.
Ingredients :
- 250 g of flour
- 2 eggs (astuces pour les remplacer juste après)
- 50 cl of milk (astuce pour faire sans juste après)
- a pinch of salt
- 1 teaspoon of sugar (optional)
- 1 teaspoon of vegetable oil of your choice
Instructions :
- In a large bowl, sift the flour. Add a pinch of salt and mix.
- In a separate bowl, beat the eggs. Add the sifted flour and salt combo and mix well until the texture is smooth.
- Add the milk little by little, whilst continuing mixing to prevent lumps. The consistency of the batter mix should be fluid, similar to a light cream.
- Add the sugar and the oil. Mix well until all the ingredients are blended together.
- Leave the mix to rest for about 30 minutes. This resting time will result in a smoother texture.
- Heat a frying pan over a medium heat. If necessary, add a small amount of butter or oil to lightly grease the pan.
- Pour a small ladle full of batter into the hot pan, tilting the pan to distribute the batter evenly. Cook the crêpe for about 1 to 2 minutes on each side, until golden brown.
Alternative egg free recipe
If you’d rather not use eggs, there are several alternatives to eggs that you can use: cornflour (also known as corn starch), banana, apple puree.
No milk crepe recipe
More and more people are lactose intolerant or prefer to avoid regular milk, crepes can also be made without using milk. You can use plant based milk or simply replace the milk by water. The latter will make your French pancakes lighter.
Fun crepes ideas: Teddy bear chocolate French pancakes
You can make your crêpes even more fun by giving them a Teddy Bear face. Perfect for a winter teddy bear picnic themed snack for example.
Or any drawing that takes your fancy for that matter. All you need to do is put aside a quantity of the batter once made, and add to it 15g of chocolate (cocoa) powder. Mix well.
Put the chocolate batter in a piping bag or similar and draw the face in your pan, let it cook for a few seconds before pouring the regular crepe batter mix.
We made Teddy bear crêpes but you could draw hearts, stars, a smiley, spirals… We’re leaving it to your imagination!
Once you have poured the batter, leave the crêpe to cook completely before turning it over. You’ll have crepes that are as beautiful as they are delicious, to the delight of every one in the family!
Now all you have left to do is to enjoy these delicious crepes, accompanied by some sugar and lemon juice, jam or some chocolate spread.
