When life gives you seville oranges… make marmalade!
Winter is hardly a synonym of bright sunshine and vivid colours! But one thing that is sure to bring peps into the winter season, apart from the vivid colours of our jam jar stickers, is the bright colours of seville oranges and yummy lemons! And the best, when life gives you seville oranges, is to make marmalade!
Our favourite Seville Orange marmalade recipe
We must own up, we have a lot of good cooks in the Mine4Sure team. Some specialises in cakes, Alicia is our popcorn specialist. But we all agree that the best recipe of Seville orange marmalade is the one from the great British baker winner Nancy Birtwhistle. Wish she was part of our team!
What you will need to make marmalade?
- A very large saucepan
- A muslin square
- 1kg of Seville oranges
- 1 large or two small lemons
- 2L of water
- 2kg of granulated sugar
- 6 to 7 glass jam jars with screw tops
- a set of beautiful personalised jam jar stickers
How to make marmalade, step by step:
1- Juice the oranges and lemons. Then put the juice into the pan with the 2L of water
2- Scrape the pips and pith, placing them in the muslin square. They contain the pectin, which plays an important part of the marmalade setting in.
Tie the square with a string onto the pan handle. It must sit in the water.
3- Next, cut the skins into thin strips. The thinner, the better. Then add all the strips in the pan with the juices and water.
4- The next stage is to turn the heat up and bring to a boil.
When the mixture has boiled, turn the temperature down and simmer gently for 2 hours.
At the end of the cooking time, the peels should be soft and tender.
5- Towards the end of the simmering time, put the sugar in a heat proof mixing bowl and warm it through in a low oven at 100°C. Adding sugar warm prevents the marmalade mixture being cooled down too much when the sugar is added.
6- When the two hours are up, remove the muslin bag, let it cool down a little and then squeeze to extract the pectin into the mixture. Be careful not too burn yourself.
7- Next, add the warmed sugar carefully and stir over a gentle heat until completely dissolved.
8- Once the sugar has dissolved fully, bring the mix to a fast boil for 20 minutes.
9- Now is the test to see if the marmalade has set.
For this, spoon a little bit of the jar onto a cold plate. Wait for a minute.
Then run your finger in the middle of it. If it makes a clearish path, the marmalade is ready.
If not, give it another 10 minutes and try the cold plate test again.
9- When the Seville orange marmalade is ready, take off the heat and leave to stand for 20 minutes.
10 -Next, spoon into the warm jars from the oven.
11- Finish by putting the lids on, while still hot.
